Kickstart your Suhoor with a Kiri Omelette! Packed with love and creamy goodness.
Ingredients
- 4 eggs
- 3 tablespoons Kiri Glass Jar cheese
- 2 tablespoons chopped parsley
- 1-2 tomatoes, thinly sliced
- A handful of arugula
- Olive oil spray
Cooking steps
- In a bowl, whisk the eggs with the chopped parsley and 1 tablespoon of Kiri cheese until well combined. For a smoother texture, use a hand mixer to emulsify the mixture.
- Lightly spray a crepe pan with olive oil and heat it over medium-low heat.
- Pour the egg mixture into the pan, tilting the pan to spread the mixture evenly.
- Spread the remaining 2 tablespoons of Kiri cheese evenly over the surface of the cooked eggs.
- Arrange the tomato slices and arugula evenly over the cheese.
- Carefully roll the egg mixture into a log shape. Transfer the roll to a cutting board and cut it into 8 equal pieces and serve.
