Zucchini Rolls

Get creative with zucchini like never before by making this new appetizer with zucchini slices. It's easy to make and a truly delicious appetizer to savor.
Ingredients
- 6 large zucchini, sliced into 1/4″-thick strips
- 2 red capsicum
- 3 tbsp. extra-virgin olive oil, divided
- Kosher salt
- Freshly ground black pepper
- 120g Kiri Tub
- Pinch of oregano
- 1 tbsp. freshly chopped basil
Cooking steps
- Slice Zucchini lengthwise
- Grill Zucchini slices until charred and tender, 3 minutes per side.
- Grill Capsicum as is without removing stem, then set aside and remove stem and seeds
- Cut Grilled capsicum into long strips
- Stir together Kiri, remaining tablespoon olive oil, and crushed oregano and season with salt and pepper. Spread a layer of Kiri on zucchini and add red pepper
- Tightly roll up and serve.
